Mashed Chickpea & Avocado Sandwich

  • 1 can (15oz.), drained and rinsed
  • 1 avocado, seed removed
  • 1 small carrot, diced
  • Juice of 1 lemon
  • ¼ cup of hummus, optional
  • Sea salt & fresh pepper, to taste
  • Handful of sunflower seeds


  1. In a medium-size bowl, add chickpeas and roughly mash with the back of a strong fork.
  2. Add avocado and mash together well.
  3. Add carrots, lemon juice, hummus,  salt, and pepper, mix to combine.

Take your favorite bread. Add some greens, sprouts and spread the mash. Delicious!

Tip: I always keep a fresh hummus in the fridge. Also good for snacking
